I made this last week and the kids loved it even though mine didn’t look as pretty as yours. I did add corn to it. There was plenty of leftovers so I won’t be making it again since I ate it for lunch and breakfast everyday last week. Had the last piece on Saturday. It was really simple to make and the flavor was wonderful. Thanks for the great recipe.

When I lived and worked in Atlanta many moons ago my office was near Underground Atlanta. There was a Mexican restaurant there that served a Taco Salad that was so much like this. Every time I would eat there I would tell myself that I would try something different but never did. I always ordered the Taco Salad. Thanks for the recipe.
